Oscar Party Snack Menu!
Organic Corn Chips with Bean Dip
8, 100% organic Non-Gmo corn tortillas (2 small tortillas per person)
2-3 teaspoons organic unrefined coconut oil
Sea Salt, a pinch
Cut tortillas in half and in half again to make triangles
Spread triangle tortilla chips out on a baking sheet and drizzle evenly with coconut oil and add sea salt
Bake at 500 degrees for 5 minutes or until crispy to your liking
Heat 2 containers of Pacific Natural Foods Organic Refried Beans on stove top and serve with tortilla chips!
Cheery Cherry Sparkler
4 ounces sparkling water
1/2 tablespoon Genki-Su Pear
1 skewer of frozen cherries
Add sparkling water and Genki-Su to a small cup
With a skewer add fresh or frozen cherries
Place skewer or stir straw in glass and enjoy!
Sweet Potato Mole Tacos
1 medium sweet potato
1 tablespoon organic unrefined coconut oil
6 small organic corn tortillas
1 packet Simply Organic mole sauce
1 cup water
1 medium avocado
1/2 white onion
Preheat oven to 425 degrees F.
Wash and chop sweet potato into small cubes
Evenly spread sweet spuds on a baking sheet and coat with coconut oil
Bake for 15-20 minutes or until sweet spuds are evenly cooked
Meanwhile as spuds are baking, it’s time to make mole sauce!
I love the organic mole sauce packet from simply organics
To make mole sauce, follow packet directions, which calls to 1. Mix packet contents with 1 cup warm water in saucepan over medium heat, stirring until completely dissolved.
Once mole is made, it’s time to make the avocado guacamole
With a chef’s knife or kitchen knife cut avocado in half and removed the pit. Spoon avocado into a small bowl and mash with a fork, walla! Guacamole.
Next chop white onion, and place into a small bowl
Wash cilantro, and place into a small bowl
Once sweet spuds have finished cooking, remove from the oven and transfer into a medium size bowl
Lastly heat tortillas by placing them on the same baking sheet that was used to make the sweet spuds and place the baking sheet back into the oven for 60 seconds. When tortillas are toasted, place on a plate
All ingredients are now ready!
I like to place all of the ingredients in individual bowls so everyone can make and plate their own tacos family style.
Coconut Buttered Popcorn
1/4 cup organic popcorn kernels
1 tablespoon organic unrefined coconut butter (oil)
Dash of sea salt
In a stovetop pan, I use a small to medium sauce pan, on medium heat, add popcorn kernels and coconut butter, and place lid on. Slowly move the stovetop pan around in a circular motion over the burner, so as to slightly rotate the kernels inside. As the coconut butter melts, this will also help each popcorn kernel become evenly coated with coconut butter. If you do not do this step, the kernels will stick and stay in place and can burn. Continue to slowly move the stovetop pan around on top of the burner until all the kernels are popped inside or they begin to slow down with a few seconds in between each pop. Be careful when removing the lid, some popcorn kernels can POP out! Transfer into a large bowl and sprinkle with a dash of sea salt. Eat immediately! Best when warm, but also makes for a great snack later!
