Pumpkin Seed Oat Energy Bites

The perfect mid-morning or afternoon snack!

Ingredients

  • 1.5 cups pitted dates
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • A pinch of sea salt
  • 1 cup Organic peanut butter
  • 1/4 cup pumpkin seeds
  • 1/4 cup unsweetened shredded coconut

Instructions

  • Add dates, oats, chia seeds and sea salt into a food processor and pulse until crumbly
  • Add mixture into an ice-cube tray 3/4 of the way full (I used a a silicone ice-cube tray) and press down with a spoon
  • Next add a layer of peanut butter and top with a sprinkle of pumpkin seeds, unsweetened shredded coconut and a pinch of sea salt
  • Place in the freezer to set for a minimum of 5 hours or ideally overnight
  • Keep stored in the freezer
