Mediterranean Bowl With Veggie Kabobs

Ingredients

red bell pepper

zucchini

red onion

micro-greens

olive oil

tablespoons
fresh lemon juice
2
whole-wheat pita bread

tablespoons
hummus

olives
Ingredients To Make Vegan Tzatziki Sauce
1/4
cup
cashew cream sauce *see recipe link below

tablespoon
cucumbers
diced

tablespoon
fresh mint
diced
Instructions
Preheat the oven to 425 degrees Fahrenheit
Slice bell pepper, zucchini and onion into equal size pieces
Place veggies and Hilary's Veggie Bites on a kabob skewer
Let kabobs roast in the oven for 20 minutes (rotate 2 times)
Meanwhile, add micro greens to a bowl
Pour lemon juice and olive oil over greens
To make Tzatziki sauce mix together cashew cream, cucumber and mint
Add hummus, olives and vegan Tzatziki sauce into bowl
Toast pita bread and add to bowl
Lastly, add kabob to the bowl and enjoy!
