Summer Rolls With Thai Almond Sauce

This recipe is great as an appetizer, snack or as a light lunch!

Ingredients

  • 6 rice papers
  • 6 romaine lettuce leaves
  • 2 medium carrots thinly sliced
  • 1 cucumber thinly sliced
  • 1/4 purple cabbage thinly sliced

To Make Thai Almond Sauce

  • 1 cup coconut milk from a can
  • 1/4 cup coconut liquid aminos
  • 1/2 cup maple syrup
  • 1/2 cup lime juice
  • 1/2 cup almond butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder

Instructions

  • Dip rice papers in warm water and then lay flat on a cutting board
  • Place veggies of choice such as romaine lettuce, carrots, cucumber and purple cabbage on top and tightly roll the rice paper

To Make Thai Almond Sauce

  • Add all ingredients into a blender and blend on high for 10 - 15 seconds
  • Enjoy!
