Rinse quinoa and add to stove-top pot with 2 cups of water. Bring to a boil, stir, reduce heat to a simmer and let cook for 20 – 30 minutes
Peel onion, rinse tomatoes, parsley & mint and chop
Add cooked quinoa to a bowl with fresh prepped veggies & hemp hearts & stir together
To make the salad dressing add garlic, olive oil, lemon juice and sea salt into a blender and blend together
Pour dressing over salad, toss together and enjoy!
