Kale And White Bean Soup

Ingredients

  • 1 small white onion diced
  • 2 cloves of garlic diced
  • 1 tablespoon coconut oil
  • 2 15-ounce cans cannelini beans, drained & rinsed
  • 2 cups of kale de-veined
  • 2 large carrots diced
  • 1 large potato diced
  • 4 cups of vegetable broth
  • 1 tablespoon Italian seasoning
  • Freshly ground black pepper to taste

Instructions

  • Add coconut oil, onion & garlic into a stovetop pan over medium heat & cook for 3 - 5 minutes, stirring occasionally
  • Add cooked onion & garlic and all remaining ingredients into soup pot or crockpot and cook on HIGH for 3 hours or LOW for 5 hours
  • Serve with optional sprouted whole-grain toast, brown rice, or quinoa
