Kale And White Bean Soup

Ingredients

small white onion
diced
2
cloves
of garlic
diced
1
tablespoon
coconut oil
2
15-ounce cans cannelini beans, drained & rinsed
2
cups
of kale
de-veined
2
large carrots
diced
1
large potato
diced
4
cups
of vegetable broth
1
tablespoon
Italian seasoning
Freshly ground black pepper to taste
Instructions
Add coconut oil, onion & garlic into a stovetop pan over medium heat & cook for 3 - 5 minutes, stirring occasionally
Add cooked onion & garlic and all remaining ingredients into soup pot or crockpot and cook on HIGH for 3 hours or LOW for 5 hours
Serve with optional sprouted whole-grain toast, brown rice, or quinoa
