Ingredients
DRY

gluten free 1-to-1 flour

chickpea flour

rolled oats

sugar

baking soda

sea salt

cinnamon
WET

eggs
or vegan egg replacer

cup
coconut oil

tablespoons
apple cider vinegar

tablespoons
tahini
1/4
cup
ground flax seeds
1/4
cup
chopped dates
Instructions
Add all 'dry' ingredients into a medium sized bowl and whisk together.
Add all 'wet' ingredients into a small bowl and stir together.
Pour 'wet' ingredients into the 'dry' and mix until fully combined.
Use a 2 oz scoop or 1/4 cup measuring cup to lay out 8 cookies on a line/greased baking sheet.
Bake in a preheated oven at 350 degrees Fahrenheit for 18 minutes.
Let cool 5 minutes, and then enjoy!
