Gluten-Free Lactation Cookies

Ingredients

DRY

  • 3/4 cup gluten free 1-to-1 flour
  • 1/4 cup chickpea flour
  • 1/2 cup rolled oats
  • 1/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 tsp cinnamon

WET

  • 2 eggs or vegan egg replacer
  • 1/4 cup coconut oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons tahini
  • 1/4 cup ground flax seeds
  • 1/4 cup chopped dates

Instructions

  • Add all 'dry' ingredients into a medium sized bowl and whisk together.
  • Add all 'wet' ingredients into a small bowl and stir together.
  • Pour 'wet' ingredients into the 'dry' and mix until fully combined.
  • Use a 2 oz scoop or 1/4 cup measuring cup to lay out 8 cookies on a line/greased baking sheet.
  • Bake in a preheated oven at 350 degrees Fahrenheit for 18 minutes.
  • Let cool 5 minutes, and then enjoy!
