Pumpkin Pie Chia Pudding

Ingredients

  • 2 tablespoons chia seeds
  • 1/2 cup non-dairy milk
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup coconut cream
  • 3 tablespoons unsweetened pumpkin puree
  • 1 tablespoon sweetener of choice cane sugar, coconut sugar or maple syrup

Instructions

  • Add the chia seeds, pumpkin pie spice and non-dairy milk to a small glass, bowl or jar and stir together.
  • Then cover and let sit in the refrigerator for 4 or more hours.
  • When the chia pudding is set, whisk the coconut cream with your sweetener of choice and pumpkin puree. Layer onto the chia pudding and top with a sprinkle of pumpkin pie spice, Enjoy!
