ground flax seeds

coconut oil

lemon juice

egg or vegan egg replacer
Instructions
Add the egg, water, oil, flax seeds, baking soda, cinnamon, salt and sugar into a large bowl and whisk together.
Then add the gluten-free flour, shredded carrots, apples and lemon juice and mix together.
Add to a muffin pan and bake at 350 degrees Fahrenheit for 25 to 30 minutes.
