Pumpkin Pasta

Ingredients

Sauce

  • 1 cup canned pumpkin puree
  • 1/2 cup soup stock
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon chili powder blend
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 2 tablespoons canned coconut milk

Pasta Dish

  • Gluten-free pasta of choice cooked
  • Pumpkin sauce
  • Fresh spinach
  • Hemp Hearts

Instructions

  • Add all sauce ingredients into a small pot, stir and simmer for 10 minutes.
  • Warm some olive oil in a large saute pan, over medium/low.
  • Add the spinach and saute for 1-2 minutes.
  • Add the cooked pasta and a few scoops of the pumpkin sauce, stir over low heat for about one minute.
  • Serve topped with hemp hearts and enjoy!
