Lemon Radish Spring Salad

Ingredients

  • 1 Limoneira classic lemon
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • 1 15-ounce can cannellini beans, drained & rinsed
  • 6 cups baby arugula
  • 2 watermelon radishes sliced
  • ¼ cup pine nuts
  • 3 tablespoons goat cheese

Instructions

  • Add arugula to a large bowl and add in juiced lemon, olive oil and sea salt. Mix to combine.
  • Add in cannellini beans, pine nuts, sliced radish and goat cheese.
  • Enjoy!
