Orange Chickpea Salad Bites

Ingredients

  • 1 15-ounce can chickpeas, drained & rinsed
  • 1 Limoneira navel orange
  • ½ cup diced yellow pepper
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon diced sweet onion
  • ½ teaspoon minced garlic
  • 1 tablespoon diced fresh cilantro

Other Ingredients

  • Crispy crackers
  • 1 avocado
  • 1 mango
  • Fresh cilantro

Instructions

  • In a medium bowl, add chickpeas, yellow pepper, olive oil, diced onion, garlic, cilantro, orange zest and juice from orange. Stir to combine.
  • Let salad marinade in the fridge for 3+ hours.
  • Dice mango and avocado. Stir mango into salad. Add a spoonful of salad on each cracker, avocado and fresh cilantro.
