Carrot Apple Maple Pancakes

Makes 12 small pancakes

Ingredients

Pancake Batter Ingredients

  • 2 medium carrots peeled and chopped
  • ½ large apple diced
  • 1 banana
  • 2 cups of rolled oats
  • ¼ cup coconut oil
  • 3 eggs
  • ¼ cup almond milk or milk of choice
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger powder
  • A dash of sea salt

Pancake Topping Ingredients

  • 1 teaspoon coconut oil
  • ½ large apple diced
  • ¼ cup of pecans
  • 2 tablespoons of maple syrup

Instructions

  • Add all pancake batter ingredients into a high-speed blender such as a Vitamix or Blendtec.
  • Blend until the batter is smooth and creamy.
  • Add a teaspoon of coconut oil to a skillet and heat on medium heat.
  • Once the skillet is hot, pour pancake batter in a small round circle, about the size of a palm, to cook.
  • Wait until you see multiple little bubbles coming through the pancake and the edges start to look cooked, this should take anywhere for 2-3 minutes. Then use a spatula to flip the pancake over and cook for another 2-3 minutes.
  • While the pancakes are cooking, add coconut oil to a pan with diced apples and let cook on low heat for 2-3 minutes, stirring occasionally.
  • Then add the pecans and make syrup and cook for another 2-3 minutes, stirring occasionally, until the apples and pecans look toasted.
  • Top pancakes with apple maple pecan mixture and another drizzle of maple syrup if you prefer and enjoy!

Notes

Because this recipe is made with oats, apple and banana it will have a slightly soft texture. As long as you cook the pancakes for 2-3 minutes on each side, they will be fully cooked!
Also, you may want to make a double batch of these pancakes because they are so good!
