Gingerbread Maple Loaf

Ingredients

  • 2 cups rolled oats
  • 1/4 cup coconut flour
  • 1/2 cup Real Maple Syrup from Canada
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ginger powder
  • ¼ teaspoon sea salt
  • 3 tablespoons lemon juice
  • 1 ½ cup non-dairy milk
  • 2 eggs

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Add oats to the blender and blend into a fine consistency.
  • Add in the rest of the ingredients and blend until smooth.
  • Pour batter into a lightly greased loaf pan and bake for 55 minutes.
  • Let the bread cool and whisk the maple icing ingredients together. Enjoy!
