California Avocado Chickpea Spread

One of my favorite ways to enjoy this recipe is at breakfast on sprouted whole-grain toast. This recipe is also great as a snack time spread or dip with crackers and fresh veggies!

Ingredients

  • 1 ripe fresh California Avocado, seeded, peeled and sliced
  • 1 can 15-ounces of unsalted chickpeas
  • 1/2 a cup of diced onion
  • 2 tablespoons of fresh herbs of choice
  • And a pinch of sea salt

Instructions

  • Rinse, seed, peel and slice avocado
  • Rinse and drain chickpeas
  • Dice red onion
  • Rinse, dry and chop herbs of choice
  • Then add avocado and chickpeas into a medium size bowl and mash together with a potato masher
  • Add in diced red onion, chopped herbs and a pinch of sea salt; mix together until evenly combined
  • Spread onto sprouted toast or enjoy as a dip!
  • This recipe pairs well with iced green or herbal tea!
