Cashew Lemon Cookies Bites

A cookie so healthy… you can eat it at breakfast!

  • 1 cup of cashews
  • 1 cup dates pitted
  • 1/2 cup rolled oats
  • 2 tablespoons fresh lemon juice
  • A pinch of sea salt


  • Add cashews into a bowl and cover with water. Let set for at least one hour or ideally overnight
  • Add soaked cashews (without the water) and oats into a food processor and pulse together. Pour into a bowl and set aside
  • Add dates into a food processor and pulse together
  • Add oat and cashew mixture back in the food processor with the dates
  • Add in fresh lemon juice and a pinch of sea salt and pulse all ingredients together
  • Roll cookie batter into balls and place in a container & cover with lid
  • Let cookies "set" in the freezer for at least 1 hour before enjoying. Letting the cookies set in the freezer helps the ingredients really bind together and not fall apart.
