Add cashews into a bowl and cover with water. Let set for at least one hour or ideally overnight
Add soaked cashews (without the water) and oats into a food processor and pulse together. Pour into a bowl and set aside
Add dates into a food processor and pulse together
Add oat and cashew mixture back in the food processor with the dates
Add in fresh lemon juice and a pinch of sea salt and pulse all ingredients together
Roll cookie batter into balls and place in a container & cover with lid
Let cookies "set" in the freezer for at least 1 hour before enjoying. Letting the cookies set in the freezer helps the ingredients really bind together and not fall apart.
