Pumpkin Seed Oat Energy Bites
The perfect mid-morning or afternoon snack!

Ingredients

pitted dates

cup
rolled oats
1
tablespoon
chia seeds
A pinch of sea salt
1
cup
Organic peanut butter
1/4
cup
pumpkin seeds
1/4
cup
unsweetened shredded coconut
Instructions
Add dates, oats, chia seeds and sea salt into a food processor and pulse until crumbly
Add mixture into an ice-cube tray 3/4 of the way full (I used a a silicone ice-cube tray) and press down with a spoon
Next add a layer of peanut butter and top with a sprinkle of pumpkin seeds, unsweetened shredded coconut and a pinch of sea salt
Place in the freezer to set for a minimum of 5 hours or ideally overnight
Keep stored in the freezer
