Preheat the oven to 350 degrees
To make oat flour add oats to a blender or food processor and pulse together
Line a pan with parchment paper
Mix flaxseed with water and let set for 3 minutes to create a flax egg
In a large bowl add coconut oil, peanut butter, flax egg and vanilla extract and stir together
Add coconut sugar and oat flour and stir together
Pour mixture into pan evenly and then spread jam across the top evenly. Place sliced fresh strawberries on top. Bake in the oven for 25 - 30 minutes
Allow bars to cool & then drizzle with melted peanut butter & sprinkle with chopped peanuts
