Peanut Butter & Jelly Bars

Ingredients

  • ¼ cup coconut oil
  • ½ cup peanut butter
  • 1 flax egg 1 tablespoon flaxseeds & 3 tablespoons water
  • 1 teaspoon of vanilla extract
  • ¼ cup coconut sugar
  • ¾ cup oat flour rolled oats pulsed
  • ¼ cup fresh strawberries
  • ¼ cup strawberry jam
  • Natural peanut butter
  • Raw unsalted peanuts

Instructions

  • Preheat the oven to 350 degrees
  • To make oat flour add oats to a blender or food processor and pulse together
  • Line a pan with parchment paper
  • Mix flaxseed with water and let set for 3 minutes to create a flax egg
  • In a large bowl add coconut oil, peanut butter, flax egg and vanilla extract and stir together
  • Add coconut sugar and oat flour and stir together
  • Pour mixture into pan evenly and then spread jam across the top evenly. Place sliced fresh strawberries on top. Bake in the oven for 25 - 30 minutes
  • Allow bars to cool & then drizzle with melted peanut butter & sprinkle with chopped peanuts
