Lemon, Carrot & Cauliflower Soup

  • 2 heads of cauliflower
  • 1 Limoneira lemon
  • 5 large carrots
  • 4 cups chicken or vegetable stock
  • 1 cup coconut milk
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder


  • Wash and chop cauliflower into florets
  • Peel and chop carrots
  • In a large soup pot, add cauliflower, carrots, seasonings and stock
  • Bring soup to a boil, add the lid and let simmer for 20-30 minutes or until vegetables are soft
  • Turn off the heat and use an immersion blender to blend the soup until it is smooth and creamy
  • Lastly, add the juice from the whole lemon and coconut milk and whisk until incorporated
