Ingredients

dry Quinoa

bunch Parsley
1
cup
Snacking Tomatoes
1
can White Beans
½
cup
Sliced Olives
½
cup
Olive Oil

tablespoons
Lemon Juice
1
Avocado
Sea Salt
to taste
Instructions
Cook quinoa according to package instructions, then let cool.
Wash and chop the parsley and snacking tomatoes.
Drain and rinse the white beans.
Add quinoa, parsley, tomatoes, white beans, sliced olives, olive oil and lemon juice to a bowl and mix together.
Optional top with slices of avocado
