Veggie Slaw with Peanut Butter Ginger Sauce

Ingredients

  • 1 cup cooked quinoa
  • 1 cup shredded carrots
  • 1 cup shredded zucchini
  • 1 cup shredded purple cabbage
  • 1 cup shredded white cabbage
  • ½ cup fresh cilantro
  • 2 tbsp black sesame seeds optional

Sauce

  • 3 tablespoons Naturally More Extra Protein peanut butter
  • 3 tablespoons real maple syrup
  • 2 tablespoons liquid aminos or soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons grated ginger
  • ½ teaspoon Thai red chili paste

Instructions

  • To make the sauce, simply add all ingredients into a small bowl and whisk together.
  • Then add your quinoa and shredded veggies to a large bowl, top with Peanut Ginger sauce and toss everything together.
  • Transfer to a serving bowl, top with fresh cilantro and optional black sesame seeds, enjoy
