Lemon Orange Energy Bites

Ingredients

  • 3 tablespoons Limoneira Classic Lemon juice
  • 3 tablespoons Limoneira Navel Orange juice
  • 2 cups gluten-free rolled oats
  • 1 cup dried apricots
  • 2 tablespoons chia seeds
  • 1/2 cup shredded coconut plus extra for rolling

Instructions

  • Add all ingredients into a food processor and pulse until batter forms.
  • Form batter into balls and roll in more shredded coconut, enjoy!
