Lemon Herb Pasta Salad

Ingredients

10-oz box penne pasta

15-ounce can chickpeas, drained & rinsed

sliced grape tomatoes

cup
diced cucumber
¼
cup
diced red onion
¼
cup
fresh parsley
½
cup
sliced olives
Lemon vinaigrette dressing
Dressing Ingredients
1
Limoneira classic lemon
1/3
cup
extra virgin olive oil
2
tablespoons
maple syrup
1
teaspoon
mustard
¼
teaspoon
black pepper
¼
teaspoon
salt
½
teaspoon
dried parsley
½
teaspoon
dried oregano
½
teaspoon
dried basil
Instructions
Cook pasta according to package directions.
While pasta is cooking, make the dressing. In a small mixing bowl, slice and juice lemon. Add the rest of the ingredients and whisk to combine.
Rinse pasta and add into a large bowl. Pour in dressing and stir to combine.
Top with chickpeas and chopped veggies and enjoy!
