Orange Chickpea Salad Bites

Ingredients

15-ounce can chickpeas, drained & rinsed

Limoneira navel orange
½
cup
diced yellow pepper
3
tablespoons
extra virgin olive oil

tablespoon
diced sweet onion
½
teaspoon
minced garlic
1
tablespoon
diced fresh cilantro
Other Ingredients
Crispy crackers
1
avocado
1
mango
Fresh cilantro
Instructions
In a medium bowl, add chickpeas, yellow pepper, olive oil, diced onion, garlic, cilantro, orange zest and juice from orange. Stir to combine.
Let salad marinade in the fridge for 3+ hours.
Dice mango and avocado. Stir mango into salad. Add a spoonful of salad on each cracker, avocado and fresh cilantro.
