Preheat oven to 400 degrees Fahrenheit.
Add 1 teaspoon of coconut oil to a medium saucepan and sauté bell pepper for 5 minutes.
Slice ¾ of the lemon and toss lemon slices in honey.
Brush 1 teaspoon of coconut oil over a large baking sheet. Add slices of lemon and roast for 10-15 minutes. Set aside.
Meanwhile, in a large bowl, add whisked egg, salmon, flour, sautéed bell pepper, cilantro, spices, mustard and juice from the rest of the lemon.
Mix together until fully incorporated. Form mixture into burger patties.
Add the last teaspoon of coconut oil to a sauté pan and add burger patties.
Sauté for 5 minutes on each side.
Build your burger using bun of choice, mayo, lettuce, burger patty and roasted lemon slices.
