1can S&W Organic Garbanzochickpeas, drained and rinsed
1eggor vegan egg replacer
¼cupcoconut oil
¼cupcoconut brown sugar*or sweetener of choice
1cupblanched almond flour
1teaspoonbaking powder
¼teaspoonsea salt
¾cupdark chocolate chips
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Add the drained and rinsed chickpeas to a food processor and pulse four to five times.
Then add the remaining ingredients, minus the chocolate chips, into the food processor and pulse until well mixed.
Add the chocolate chips and pulse one to two times; or transfer dough to a bowl and stir the chips in by hand.
Form batter into cookies and place on a lined baking sheet. Bake for 20-25 minutes.
Cool for 5 minutes and enjoy!
Notes
I try to use as little sweetener in my recipes as possible, this recipe only has ¼ cup sugar, which makes them just barely sweet. This is perfect for my family, as it is what we are used to. That said, you may want to use ½ cup or even ¾ cup.
