Almond Apricot Bars
A delicious Fall breakfast recipe

Ingredients

cup
dried apricots

cup
unsweetened shredded coconut
½
cup
raw unsalted almonds
1/2
cup
gluten-free rolled oats
1
tablespoon
of organic unrefined coconut oil
2
pinches
of sea salt
Instructions
Combine all ingredients into a food processor and pulse until evenly combined and a sticky batter is formed
Place batter on parchment paper in a rectangular pan and use hands to press batter together into a firm rectangle shape
Cover and place in the freezer for a minimum of four hours or ideally overnight
Then slice into bars or squares
Place parchment paper in between bars to keep them from sticking together
Store in the refrigerator in an airtight container
Notes
*Use 1.5 or 2 cups dried apricots if you find these bars are too crumbly
