Lemon Chicken Zucchini Pesto Pasta

Ingredients

  • 1 Limoneira classic lemon
  • 8- oz bowtie pasta
  • ½ cup lemon basil sauce
  • 2 chicken breasts
  • 1 zucchini
  • ¼ cup plant-based parmesan

Lemon Basil Sauce Ingredients

  • 1 Limoneira classic lemon juice and zest
  • 4- oz fresh basil
  • ¼ cup avocado oil
  • ½ cup hemp seeds
  • ½ teaspoon minced garlic
  • ¼ teaspoon salt

Instructions

  • Add all the lemon basil sauce ingredients into a high-speed blender and blend until smooth.
  • Boil the pasta according to package directions.
  • Cut the zucchini into quarters, drizzle with oil and season with salt and pepper.
  • Roast or grill the zucchini and chicken. Chop the cooked chicken into bite size pieces.
  • In a large bowl, add the cooked pasta, grilled chicken and grilled zucchini. Top with lemon slices, zest and parmesan. Enjoy!
