Orange Cranberry Oatmeal Bread

Ingredients

  • 3 cups rolled oats
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup fresh squeezed Limoneira orange juice
  • ½ cup non-dairy milk
  • 2 eggs
  • ½ cup dried cranberries
  • 1 tablespoon orange zest

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a blender, add oats and blend until a flour consistency forms.
  • Add in coconut sugar, baking soda, salt, orange juice, milk and eggs. Blend until smooth.
  • Add in cranberries and orange zest and blend on slow to mix.
  • Pour mixture into a greased bread loaf pan and bake for 50 minutes.
  • Let cool, slice and enjoy!
