Mini Apple Pies

- 5 Rockit™ Apples
- Traditional or gluten-free pie dough
- ¼ cup oats I use gluten-free rolled oats
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350 degrees Fahrenheit
- Mix cinnamon and oats together
- Cut pie dough into small rounds about 3 inches in diameter. Leave room to also cut thin ¼ wide strips, you’ll use these to make the lattice top!
- Core Rockit apples and then place cored apple on top of dough round and fold the dough up the side, pressing gently so the dough molds to the side of the apple. Fill the core with the cinnamon-oats mixture
- Using the thin dough strips create a lattice top over each apple, then place each apple in a cupcake liner and a cupcake pan
- Cover with foil and bake for 20 minutes, then remove foil and bake for another 10-15 minutes
- Top with your favorite dairy-free ice-cream and enjoy!
