Apple Butternut Squash Soup

Ingredients

large butternut squash

green or red apples
1/4
cup
canned coconut milk
2
cups
veggie soup stock
1/2
teaspoon
sea salt
1/2
teaspoon
pepper
1/2
teaspoon
ginger
1/2
teaspoon
turmeric powder
Instructions
Core and chop the apples.
Peel and chop the butternut squash.
Add the butternut squash and apples to a soup pot with the coconut milk, soup stock and seasonings.
Simmer for 15 to 20 minutes until soft.
Add to a high speed blender and blend until smooth, serve and enjoy!
Notes
If you prefer a thinner soup, feel free to use 3 cups of veggie soup stock.
