Hi Friends! I love apples and I love Fall! So today I’m sharing 3 easy, healthy apple recipes that are all gluten-free, dairy-free, delicious and so simple to make! Enjoy!

Gluten-Free Apple Carrot Muffins

- 1.5 cups shredded carrots
- 1 cup shredded apples
- 1 cup Bob's Red Mill Gluten-Free 1-to-1 baking flour
- 1/3 cup coconut sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 3 tablespoons ground flax seeds
- 1/4 cup coconut oil
- 3 tablespoons lemon juice
- 1/4 cup water
- 1 egg or vegan egg replacer
Instructions
- Add the egg, water, oil, flax seeds, baking soda, cinnamon, salt and sugar into a large bowl and whisk together.
- Then add the gluten-free flour, shredded carrots, apples and lemon juice and mix together.
- Add to a muffin pan and bake at 350 degrees Fahrenheit for 25 to 30 minutes.

Apple Butternut Squash Soup

- 1 large butternut squash
- 2 green or red apples
- 1/4 cup canned coconut milk
- 2 cups veggie soup stock
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ginger
- 1/2 teaspoon turmeric powder
Instructions
- Core and chop the apples.
- Peel and chop the butternut squash.
- Add the butternut squash and apples to a soup pot with the coconut milk, soup stock and seasonings.
- Simmer for 15 to 20 minutes until soft.
- Add to a high speed blender and blend until smooth, serve and enjoy!
Notes
If you prefer a thinner soup, feel free to use 3 cups of veggie soup stock.

Baked Apples

- 4 red or green apples
- 1/2 cup rolled oats
- 1/3 cup coconut sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 tablespoon vegan butter
- 1/4 cup hot water
Instructions
- Use a sharp paring knife to carefully remove the top of the apple core. Then use a spoon to scoop out the remaining apple core, be careful not to break through the bottom of the apple.
- Add the spices, oats and sugar to a small bowl and stir together.
- Place the apple into a baking dish and fill with the oat mix. Top each apple with a small scoop of vegan butter and fill the dish with the ¼ cup of hot water.
- Bake at 375 degrees Fahrenheit for about one hour, until apples are soft to the touch, enjoy!
