Super Crunch Salad

Ingredients

  • 1/2 head broccoli
  • 1/2 head cauliflower
  • 1 red bell pepper
  • 2 large carrots
  • 1/4 a head of purple cabbage
  • 2 cups baby kale
  • 3/4 cup currants
  • 1/2 cup hemp hearts
  • 1/2 cup parsley
  • Juice from 1 lemon
  • 1 tablespoon of crushed garlic
  • 3 tablespoons olive oil
  • Sea salt & black pepper

Instructions

  • Finely chop up all vegetables and add to a large bowl. You can chop by hand or use a food processor
  • Top with top with garlic, currants, hemp hearts, lemon juice, olive oil and salt & pepper
  • Mix all ingredients together, serve & enjoy!
