Hi Friends! Welcome back to Healthy Grocery Girl! Today I’m sharing how to make this Super Crunch Salad. This salad is packed full of nourishing vegetables that are rich in fiber, vitamins, minerals and antioxidants. It holds up well in the refrigerator for days, making it a great meal prep salad to enjoy healthy veggies all week long!
Super Crunch Salad

- 1/2 head broccoli
- 1/2 head cauliflower
- 1 red bell pepper
- 2 large carrots
- 1/4 a head of purple cabbage
- 2 cups baby kale
- 3/4 cup currants
- 1/2 cup hemp hearts
- 1/2 cup parsley
- Juice from 1 lemon
- 1 tablespoon of crushed garlic
- 3 tablespoons olive oil
- Sea salt & black pepper
Instructions
- Finely chop up all vegetables and add to a large bowl. You can chop by hand or use a food processor
- Top with top with garlic, currants, hemp hearts, lemon juice, olive oil and salt & pepper
- Mix all ingredients together, serve & enjoy!
