Recipe: Almond Apricot Bars

Breakfast Week Continues! Quick, Healthy, Fall Breakfast Recipes is the theme this week. Today I am sharing with you how to make Almond Apricot Bars. This recipe is a twist on my Coconut Apricot Bites recipe. These bars require no baking and are great for breakfast but also great to add into a lunch and as an afternoon or after school snack! Almond Apricot Bars

A delicious Fall breakfast recipe

Ingredients

  • 1 cup dried apricots
*
  • 1 cup unsweetened shredded coconut
  • ½ cup raw unsalted almonds
  • 1/2 cup gluten-free rolled oats
  • 1 tablespoon of organic unrefined coconut oil
  • 2 pinches of sea salt

Instructions

  • Combine all ingredients into a food processor and pulse until evenly combined and a sticky batter is formed
  • Place batter on parchment paper in a rectangular pan and use hands to press batter together into a firm rectangle shape
  • Cover and place in the freezer for a minimum of four hours or ideally overnight
  • Then slice into bars or squares
  • Place parchment paper in between bars to keep them from sticking together
  • Store in the refrigerator in an airtight container

Notes

*Use 1.5 or 2 cups dried apricots if you find these bars are too crumbly
