Recipe: Almond Apricot Bars

Breakfast Week Continues! Quick, Healthy, Fall Breakfast Recipes is the theme this week. Today I am sharing with you how to make Almond Apricot Bars. This recipe is a twist on my Coconut Apricot Bites recipe. These bars require no baking and are great for breakfast but also great to add into a lunch and as an afternoon or after school snack! Almond Apricot Bars
A delicious Fall breakfast recipe

Ingredients
- 1 cup dried apricots *
- 1 cup unsweetened shredded coconut
- ½ cup raw unsalted almonds
- 1/2 cup gluten-free rolled oats
- 1 tablespoon of organic unrefined coconut oil
- 2 pinches of sea salt
Instructions
- Combine all ingredients into a food processor and pulse until evenly combined and a sticky batter is formed
- Place batter on parchment paper in a rectangular pan and use hands to press batter together into a firm rectangle shape
- Cover and place in the freezer for a minimum of four hours or ideally overnight
- Then slice into bars or squares
- Place parchment paper in between bars to keep them from sticking together
- Store in the refrigerator in an airtight container
Notes
*Use 1.5 or 2 cups dried apricots if you find these bars are too crumbly
