With a few weeks left of summer, I’ve been making the most of it with these quick and healthy Summer Veggie Rolls with Thai Almond Sauce! The almond sauce is great because almonds, being a nut, contain protein which helps this light meal actually be quite satisfying!

This recipe is great as an appetizer, snack or as a light lunch!

Ingredients
- 6 rice papers
- 6 romaine lettuce leaves
- 2 medium carrots thinly sliced
- 1 cucumber thinly sliced
- 1/4 purple cabbage thinly sliced
To Make Thai Almond Sauce
- 1 cup coconut milk from a can
- 1/4 cup coconut liquid aminos
- 1/2 cup maple syrup
- 1/2 cup lime juice
- 1/2 cup almond butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
Instructions
- Dip rice papers in warm water and then lay flat on a cutting board
- Place veggies of choice such as romaine lettuce, carrots, cucumber and purple cabbage on top and tightly roll the rice paper
To Make Thai Almond Sauce
- Add all ingredients into a blender and blend on high for 10 - 15 seconds
- Enjoy!
