This Lemon Chicken Zucchini Pesto Pasta is sure to be a new family favorite! This pesto is simple to make and the entire recipe is gluten-free and dairy-free. We love making a big batch of this pesto to use throughout the week.
Enjoy hot or chilled, this dish is great for summer dinners or you can even double or triple the recipe to take with you to gatherings. You can make this dish right before serving or cook the pasta and make the pesto ahead of time to toss together when you’re ready to eat!
Health Benefits of Ingredients:
The antioxidants found in lemons have properties that can protect cells against oxidative stress. Oxidative stress can lead to inflammation, which is a precursor to cardiovascular disease. Lemons also contain vitamin C, which has been shown to aid in decreasing the severity and duration of sickness with having adequate levels in the body.
Zucchini contains both soluble and insoluble fiber, which is important for digestion! Soluble fiber dissolves in water creating a gel like consistency to aid in digestion. Insoluble fiber draws water into your stool, creating bulk. Adding zucchini into recipes is just one way to get these different types of fiber into your diet.

Lemon Chicken Zucchini Pesto PastaPrint Recipe
- 1 Limoneira classic lemon
- 8- oz bowtie pasta
- ½ cup lemon basil sauce
- 2 chicken breasts
- 1 zucchini
- ¼ cup plant-based parmesan
Lemon Basil Sauce Ingredients
- 1 Limoneira classic lemon juice and zest
- 4- oz fresh basil
- ¼ cup avocado oil
- ½ cup hemp seeds
- ½ teaspoon minced garlic
- ¼ teaspoon salt
- Add all the lemon basil sauce ingredients into a high-speed blender and blend until smooth.
- Boil the pasta according to package directions.
- Cut the zucchini into quarters, drizzle with oil and season with salt and pepper.
- Roast or grill the zucchini and chicken. Chop the cooked chicken into bite size pieces.
- In a large bowl, add the cooked pasta, grilled chicken and grilled zucchini. Top with lemon slices, zest and parmesan. Enjoy!
