Apricot Coconut Bites
Makes 10-12 Bites
1 cup dried apricots
1 cup unsweetened shredded coconut
1/2 cup gluten-free oats
1 tablespoon of organic unrefined coconut oil
1 tablespoon 100% pure maple syrup
Directions: Combine all ingredients into a food processor or high speed blender pulse until evenly combined and a sticky batter is formed. Roll into 1/2 inch size balls & place on a plate or in a Tupperware, cover & let set in the freezer for 1 hour. Enjoy!
