Summer-time means great weather and great food! Today I have 3 recipes to share with you that are perfect for summer parties or just hanging out in your backyard! We’re making Hemp Hearts Guacamole, Quinoa Hemp Tabouli and Frozen Strawberry Lemonade. Hemp hearts is the theme for today’s video and I could not be more thankful to be a Manitoba Harvest ambassador! Hemp hearts are a great way to add protein, omega 3 and omega 6 fats to our diet… just sprinkle them on or in your favorites foods! Frozen Strawberry Lemonade

Ingredients

  • 2 cups cold filtered water
  • 2 cups frozen sliced strawberries
  • 1 Limoneira lemon
  • 1/4 cup raw honey
  • Sea salt

Instructions

  • Add 2 cups of cold filtered water and frozen strawberries into blender
  • Completely peel the lemon and add to blender. If you do not have a high powdered blender, just add the juice of the entire lemon
  • Add in raw honey and a pinch of sea salt
  • Blend until smooth & enjoy

HempTabouli

Quinoa Hemp Tabouli

The perfect light summer salad!

Ingredients

INGREDIENTS

  • 1 cup uncooked Quinoa
  • ¼ red onion chopped
  • 1 cup cherry tomatoes chopped
  • ½ cup fresh parsley minced
  • ½ cup fresh mint minced
  • ½ cup hemp seeds

SALAD DRESSING

  • 2 cloves of garlic
  • ¼ cup olive oil
  • 1 lemon juiced
  • Pinch of sea salt

Instructions

  • Rinse quinoa and add to stove-top pot with 2 cups of water. Bring to a boil, stir, reduce heat to a simmer and let cook for 20 – 30 minutes
  • Peel onion, rinse tomatoes, parsley & mint and chop
  • Add cooked quinoa to a bowl with fresh prepped veggies & hemp hearts & stir together
  • To make the salad dressing add garlic, olive oil, lemon juice and sea salt into a blender and blend together
  • Pour dressing over salad, toss together and enjoy!

Hemp Hearts Guacamole

Guac on a whole new level!

Ingredients

  • 6 organic corn tortillas
  • 1 teaspoon coconut oil
  • 3 ripe avocado
  • 1/4 cup white onion
  • 1/4 cup hemp hearts
  • 2 tablespoons fresh cilantro
  • 1/2 cup cherry tomatoes
  • 1 lime juice
  • Pinch of sea salt

Instructions

  • Preheat the oven to 500 degrees Fahrenheit
  • Cut tortillas into triangles, place on a baking sheet, drizzle with coconut oil and sea salt. Make sure that the tortillas are evenly coated with coconut oil & sea salt
  • Bake in the oven for 3 - 5 minutes until crispy
  • Next to make guacamole, slice avocado in half, remove the pit and add avocado into a bowl. Add remaining ingredients & mix together
  • Enjoy with fresh homemade tortilla chips!
