Sweet Spud Mole Tacos
Do you like tacos? Do you like sweet potatoes? Do you like mole sauce? Then this recipe is FOR YOU! Enjoy my Sweet Potato (sweet spuds as I like to call them) Mole Tacos!
Sweet Potato Mole Tacos
Serves 2-3
Ingredients:
1 medium sweet potato
1 tablespoon organic unrefined coconut oil
6 small organic corn tortillas
1 packet Simply Organic mole sauce
1 cup water
1 medium avocado
1/2 white onion
Fresh cilantro
Directions:
Preheat oven to 425 degrees F.
Wash and chop sweet potato into small cubes
Evenly spread sweet spuds on a baking sheet and coat with coconut oil
Bake for 15-20 minutes or until sweet spuds are evenly cooked
Meanwhile as spuds are baking, it’s time to make mole sauce!
I love the organic mole sauce packet from simply organics
To make mole sauce, follow packet directions, which calls to 1. Mix packet contents with 1 cup warm water in saucepan over medium heat, stirring until completely dissolved.
2. Bring mixture to a boil, then stir constantly for 20 seconds. Remove from heat, and pour into a small-medium size bowl
Once mole is made, it’s time to make the avocado guacamole
With a chef’s knife or kitchen knife cut avocado in half and removed the pit. Spoon avocado into a small bowl and mash with a fork, wa-la! Guacamole.
Next chop white onion, and place into a small bowl
Wash cilantro, and place into a small bowl
Once sweet spuds have finished cooking, remove from the oven and transfer into a medium size bowl
Lastly heat tortillas by placing them on the same baking sheet that was used to make the sweet spuds and place the baking sheet back into the oven for 60 seconds. When tortillas are toasted, place on a plate
All ingredients are now ready!
I like to place all of the ingredients in individual bowls so everyone can make and plate their own tacos family style.
*Mole sauce from Simply Organic is gluten-free however is high in sodium.
