3 Easy, Healthy Summer Salad Recipes

Oh hello Summer! Sunshine, sunshine & more sunshine is my favorite! Of course what goes great with a sunny afternoon is a big summer salad! Today I’m sharing three easy summer salad recipes. Enjoy!

3 Bean Salad

Ingredients

Salad Ingredients

  • 2 cups of fresh green beans
  • 1/4 onion sliced
  • 1 can 15-ounces garbanzo beans / chickpeas
  • 1 can 15-ounces kidney beans
  • 1 yellow bell pepper
  • 2 tablespoon fresh parsley chopped

Salad Dressing Ingredients

  • 3/4 up olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon garlic powder
  • 1 pinch of sea salt and freshly ground pepper

Instructions

  • Drain and rinse beans
  • Wash green beans, cut off ends and cut in half
  • Wash and slice bell pepper and onion
  • To make salad dressing add salad dressing ingredients into a small mason jar, add a lid & shake together. You can also add ingredients to a bowl and whisk together
  • Add all salad ingredients into a medium size bowl, drizzle with salad dressing and mix together! Enjoy!

Fresh Fruit & Mint Salad

Ingredients

  • 2 cups of fresh strawberries
  • 1 cup of fresh blueberries
  • 1 lime
  • 2 tablespoons fresh mint chopped

Instructions

  • Wash fruit
  • Slice strawberries in half and chop mint
  • In a medium size bowl add strawberries, blueberries, fresh lime juice & chopped mint
  • Enjoy!

Notes

This recipe is very flexible! Add as much mint, berries or lime as you personally prefer!

Summer Pasta Salad

Ingredients

Salad Ingredients

  • 2 - 3 cups of cooked lentil pasta I love Tolerant Eats or Modern Table!
  • 1/2 cup olives sliced
  • 1 cup cherry tomatoes sliced
  • 1 tablespoons fresh cilantro chopped
  • 1 can 15-ounces black beans, drained & rinsed
  • 1/4 onion diced

Salad Dressing Ingredients

  • 3/4 up olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon garlic powder
  • 1 pinch of sea salt and freshly ground pepper

Instructions

  • Add all salad ingredients into a medium size bowl, top with HGG's Lemon Vinaigrette Salad Dressing and mix together. Enjoy!
