Hi Friends! Welcome back to the blog. As the temperatures start to drop, there is nothing better than to cozy up to some warm soup! Today we are sharing a healthy homemade favorite, Lemon Chicken & Rice Soup! This simple one pot recipe is perfect for the entire family!

Lemon Chicken & Rice Soup

Ingredients

  • 4 cups chicken broth
  • 1 cup water
  • 1 Limoneira lemon juiced
  • 1 cup brown rice
  • 1 cup diced onion
  • 2 celery stalks diced
  • 3 large carrots diced
  • 1 tablespoon red palm oil
  • 1 tablespoon dried basil
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 chicken breast chopped

Instructions

  • In a large soup pot, add oil over medium heat
  • Add in diced onion and garlic and saute for 3 minutes
  • Add in chopped carrots and celery and saute for 5 minutes
  • Add in the rest of the ingredients, cover and let simmer for 25-35 minutes
  • Enjoy
