When chia seeds are left in liquid, they expand forming a pudding-like consistency that makes for the perfect grab-n-go breakfast or snack.
This Creamy Orange Chia Pudding recipe has tangy and refreshing citrus flavor that is great for summer! One of the best parts about this recipe is that it is packed with plant-based protein and fiber to keep you feeling full!
Why We Love Chia Seeds
These amazing little seeds are a great addition into meals and snacks because they contain fiber, healthy omega-3 fats, and even a little protein. Just 2 tablespoons contains almost 5 grams of protein and almost 10 grams of fiber! The omega-3’s found in chia seeds may help with lowering your risk of certain diseases such as heart disease. Since they expand in liquid giving a gel-like consistency, they are also a great substitute for egg in baking!

Creamy Orange Chia PuddingPrint Recipe
- 2 Limoneira navel oranges
- ¼ cup chia seeds
- ½ cup non-dairy yogurt
- 3 tablespoons maple syrup
- ½ teaspoon vanilla extract
- 1 tablespoon orange zest
- Juice oranges to get 1 cup orange juice.
- In a mixing bowl, add orange juice, chia seeds, yogurt, maple syrup and vanilla extract.
- Whisk to combine and then let sit for 15 minutes.
- Thinly slice leftover orange and add into container along with chia pudding. Top with orange zest.
- Cover and set in the fridge for 2+ hours.
