Cashew Lemon Cookies
Today I am sharing how to make Cashew Lemon Cookies Bites. While these are not the traditional cookies most of us probably grew up eating, they taste sweet and resemble a cookie so… I call them cookie bites. Beyond being healthy and delicious tasting, these cookies require no cooking! I love that! They also are so healthy that you can really eat them any time of day. My husband loves these cookies early in the morning before a workout and I love them around 3pm when I’m in the mood for a sweet treat that is still healthy. Cashew Lemon Cookie Bites
Cashew Lemon Cookies Bites
Ingredients
- 1 cup of cashews
- 1 cup dates pitted
- 1/2 cup rolled oats
- 2 tablespoons fresh lemon juice
- A pinch of sea salt
Instructions
- Add cashews into a bowl and cover with water. Let set for at least one hour or ideally overnight
- Add soaked cashews (without the water) and oats into a food processor and pulse together. Pour into a bowl and set aside
- Add dates into a food processor and pulse together
- Add oat and cashew mixture back in the food processor with the dates
- Add in fresh lemon juice and a pinch of sea salt and pulse all ingredients together
- Roll cookie batter into balls and place in a container & cover with lid
- Let cookies “set” in the freezer for at least 1 hour before enjoying. Letting the cookies set in the freezer helps the ingredients really bind together and not fall apart.
