Happy September! This month we are focusing on nourishing recipes for the back to school season! In today’s video, we are sharing 3 citrus inspired Lunchbox recipes! These lunchbox recipes are perfect for kids and adults and you can meal prep them ahead of time so you are ready to go for the week!
Lemon Chicken, Brown Rice & Broccoli

- 3 tablespoons Limoneira classic lemon juice
- 3 tablespoons extra virgin olive oil
- 2 teaspoons cumin
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 chicken breast
- Cooked brown rice
- Raw broccoli
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a small bowl, whisk together lemon juice, olive oil & spices.
- Pour over chicken and let marinate for 30 minutes.
- Bake in oven for 30 minutes or until minimum internal temperature of 165 degrees F is reached.
- Cut chicken into cubes and fill lunchbox with chicken, brown rice and broccoli.
Lemon Pasta, Pistachios & Orange Slices

- 8 oz of pasta
- 3 tablespoons olive oil
- 1/2 cup peas
- Salt and pepper
- 1/2 Limoneira lemon
- Green onions
- Pistachios
- Orange slices
Instructions
- Cook pasta of choice according to package directions.
- Once pasta is cooked, in a large bowl add pasta, olive oil, salt & pepper, peas, lemon juice and green onion. Toss to combine.
- In lunchbox add lemon pasta, pistachios and orange slices.
Lemon Hummus Roll Ups with Veggies & Fruit

- 1 can chickpeas drained & rinsed
- 1/4 cup tahini
- 2 Limoneira lemons
- 3 tablespoons olive oil
- 2 garlic cloves
- Pinch of sea salt
- Tortilla
- Cucumber sliced
- Carrots
- Snap peas
- Raspberries
Instructions
- Add chickpeas, tahini, juice from lemons, olive oil, sea salt and garlic cloves to a food processor. Blend until smooth.
- Spread some hummus over tortilla slice and add sliced cucumber. Roll up tortilla and cut into cubes.
- Add to lunchbox with carrots, snap peas and raspberries.
