Gluten-Free Cara Cara Chia Muffins

Is there anything better than warm muffins right out of the oven?! We love eating muffins for breakfast, snack or even dessert and are always looking for quick go-to recipes. Today we are excited to share with you these delicious Gluten-Free Cara Cara Chia Muffins! These muffins will be the perfect addition to your Easter breakfast or brunch menu or to make as a family for an after school snack.

We prefer making own quick muffin batter instead of a store bought mix because a lot of conventional mixes contain a ton of added sugar, dairy, flavorings and artificial ingredients. These muffins contain real, whole food ingredients that you can pronounce and have some added protein, fiber and healthy fats!

Cara Cara Orange

Oranges are a great source of prebiotic fiber! This is the type of fiber that feeds your good gut microbes and helps them thrive! When those microbes are well nourish, your gut is able to heal itself and digestion runs smoother. Oranges are also a good source of potassium, which is essential for heart function, nerve function and muscle contraction.

Buckwheat

Despite it’s name, buckwheat does not actually contain wheat, making it a great gluten-free alternative! It is an excellent source of plant-based protein containing about 6 grams per 1/4 cup! It also contains 12 amino acids that work toward muscle and cell growth. The antioxidants found in buckwheat may help stabilize blood pressure and protect against certain diseases such as cancer.

Chia Seeds

Chia seeds are a great addition into meals and snacks because they contain fiber, healthy omega-3 fats, and even a little protein. Just 2 tablespoons contains almost 5 grams of protein and almost 10 grams of fiber! The omega-3’s found in chia seeds may help with lowering your risk of certain diseases such as heart disease.

Gluten-Free Cara Cara Chia Muffins

Ingredients

  • ¾ cup Limoneira cara cara orange juice
  • ½ Limoneira classic lemon
  • 2 eggs
  • ½ cup melted coconut oil
  • ½ teaspoon vanilla extract
  • ½ cup organic sugar
  • 1 ½ cups Bob’s red mill gluten-free 1-to-1 flour
  • ½ cup buckwheat flour
  • ¼ cup chia seeds
  • 1 ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  • Preheat oven 350 degrees Fahrenheit.
  • In a large bowl, add gluten-free flour, buckwheat flour, sugar, chia seeds, baking soda and salt. Whisk to combine.
  • In a separate bowl, add eggs, coconut oil, vanilla extract, orange juice and lemon juice. Whisk to combine.
  • Add dry ingredients into the wet and stir to incorporate.
  • Add a scoopful of batter into a greased or lined muffin tin.
  • Bake for 20-25 minutes.
  • Allow muffins to cool. Top with orange zest and enjoy!
