Gluten-Free Smash Cake and Ella’s First Birthday Party

Hi Friends! Welcome back to Healthy Grocery Girl! I can’t believe my little one is… ONE! We had the most beautiful birthday party for sweet E this past weekend with family and friends. We threw a cELLAbrate party with a sunny yellow theme because Ella brings so much sunshine into our life!

Below is a recap of photos and video from her special day and the recipe for her Smash Cake! Which she LOVED! This cake is gluten-free, dairy-free and low in sugar and honestly – has a very simple flavor, which is a nicer way of saying a bit bland, but that is because it has hardly any sugar. That’s where the frosting comes in! Frosting adds quiet a bit of sugar… so this balances out the simple flavor of the cake. You can add as little or as much frosting as you like, or none at all! I went for a “naked” frosted cake look to keep the frosting minimal. Let’s just say Ella was a happy girl having everyone sing to her Happy Birthday and to dive into her first cake. First Birthday Smash Cake

Ingredients

  • 1/2 cup Bob's Red Mill Gluten-Free 1-to-1 Baking Flour
  • 1/3 cup coconut flour*
  • 1 teaspoon baking soda
  • 3 tablespoons coconut sugar**
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 egg or vegan egg replacer
  • 1 tablespoon coconut oil
  • Cake frosting of choice***

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Add all ingredients into a blender or mixer and mix well.
  • Pour into one or two mini cake tins and bake for 45 minutes to one hour, until the top is set and a toothpick inserted in the center comes out clean.
  • Let cool before frosting.

Notes

*The coconut flour in this recipe is optional, feel free to use any other flour you prefer or simply swap for more Bob's baking flour.
**This recipe is intentionally not very sweet, because I made it for my one year old, you are welcome to add more sweetener, if you prefer.
***To keep our life simple we used Simple Mills Vanilla frosting for Ella's cake, but if you choose to make homemade simply whisk about 1 cup of powdered sugar with 2 tablespoons of canned coconut milk.
