Apple Recipes Featuring Autumn Glory Apples!
Apples are a favorite in our house, we eat them every day! One variety that is so incredibly delicious is Autumn Glory apples. These apples have a sweet firm flesh with flavor notes of cinnamon and caramel, they are so good! Autumn Glory apples are a cross between a Fuji and a Golden Delicious and like all fruit grown by Superfresh Growers, Autumn Glory apples are completely GMO-free! Grown in central Washington these crisp apples have a pinkish red blush coloring and are a great way to experience autumn all year!
This past weekend I had the honor of hosting an Autumn Glory apple blogger potluck with some amazing local bloggers. We each created a dish featuring Autumn Glory apples, which all turned out amazing! I will share some of the recipes below.

Spiced Apple Cider

- 10 Autumn Glory Apples
- 1 cinnamon stick
- 1 tablespoon whole cloves
- 1 tablespoon whole allspice
- 1 navel orange peeled and sliced
Instructions
- Add all ingredients into a slow cooker and cook on high for 2 hours or low for 4 hours.
- Serve hot or cold, enjoy!
Autumn Apple Salad

Salad Ingredients
- 1 acorn squash
- 1 tablespoon unrefined coconut oil
- 1 large bunch curly kale stemmed and chopped
- 2 Autumn Glory apples
- ½ cup pecans
- ⅓ cup unsweetened dried cranberries
- ¼ cup hemp seeds
Apple Honey Mustard Dressing Ingredients
- ½ Autumn Glory apple peeled, cored and diced
- ¼ cup extra virgin olive oil
- ¼ cup yellow mustard
- ¼ cup apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon sea salt
Instructions
Dressing Directions
- Add all dressing ingredients into a small high speed blender and blend until smooth.
Salad Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Cut the acorn squash in half, lengthwise and scoop out the seeds; then slice the squash into semi-circles.
- Toss squash in coconut oil and roast in the oven for 30 minutes. Meanwhile wash and chop kale and wash and dice Autumn Glory apples.
- On a serving plate add kale, acorn squash, diced apples, pecans, cranberries and hemp seeds. Serve with Apple Honey Mustard Dressing!
Roasted Carrot Apple Soup

- 2 tablespoons unrefined coconut oil
- 1 lb carrots
- ½ sweet onion diced
- 2 Autumn Glory apples peeled & chopped
- 1 celery stalk diced
- 1 sprig fresh rosemary stripped and chopped
- 4 cups soup stock
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Peel and chop carrots. On a baking sheet add one tablespoon coconut oil with carrots and roast in the oven for 20 minutes.
- Meanwhile, warm one tablespoon coconut oil in a soup pot over medium heat, add onion and saute for 5 minutes.
- Wash and dice or chop apples, celery and rosemary.
- Then add apples, celery and rosemary to the soup pot and saute for 3 minutes.
- When carrots have finished roasting, add to soup stock with salt, pepper and cinnamon; bring to a boil and then lower heat and simmer for 30 minutes.
- Remove soup from heat. In a blender or with a stick blender, blend until smooth.
- Serve hot or cold garnished with cinnamon and fresh rosemary, enjoy!
Apple Lentil Loaf

- 3 tbsp ground flax seeds + 1/3 cup warm water
- 1 cup rolled oats
- 1 Autumn Glory apple grated
- ½ sweet onion diced
- 1 stalk celery diced
- 1 carrot diced
- 1 15oz can black lentils
- 3 garlic cloves minced
- 1 teaspoon paprika
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- ⅓ cup ketchup or BBQ sauce
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large mixing bowl ground flax and warm water and let sit for 3 minutes. This will create a thick gel-like consistency.
- In a blender or food processor, add rolled oats and pulse to create a fine oat flour with a few whole oats still remaining.
- Next, wash and grate the Autumn Glory apple; dice the celery and carrot.
- Add the oat flour, apple, celery, carrot, lentils, garlic, paprika, salt and pepper to the mixing bowl with the flaxseed mixture and stir until fully combined.
- Add mix to a greased loaf pan and bake for 45 minutes. At 30 minutes, remove from the oven and top with ketchup or BBQ sauce of choice place back in to finish baking.
- Garnish with apple slices, baked in the 350 degree oven for about 10 minutes; and then enjoy!
