Lemon Almond Poppy Seed Cake

We love citrus flavors all year-round, but there is something special about lemony flavors in the spring and summer! We know you are going to love this gluten-free and dairy-free lemon poppyseed cake! It’s sweet, tangy and perfect for all family and friend gatherings!

This cake is made with simple real, whole food ingredients, which can ease your mind while enjoying! We love that it can be enjoyed as a dessert, but also makes a great treat for brunch or mid-day snack!

Why We Love Lemons!

The antioxidants found in lemons have properties that can protect cells against oxidative stress. Oxidative stress can lead to inflammation, which is a precursor to cardiovascular disease.

Lemons also contain vitamin C, which has been shown to aid in decreasing the severity and duration of sickness with having adequate levels in the body.

Lemon Almond Poppy Seed Cake

Ingredients

  • 2 cups blanched almond flour
  • ½ cup cassava flour
  • ½ teaspoon salt
  • 1 ½ teaspoon baking soda
  • 1 tablespoon poppy seeds
  • 2 tablespoons Limoneira classic lemon juice
  • 1/3 cup maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 3 eggs

Icing Ingredients

  • 1 cup powdered sugar
  • 3 tablespoons coconut milk
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a medium bowl, add almond flour, cassava flour, salt, baking soda and poppy seeds. Whisk to combine.
  • In a separate large bowl, add lemon juice, maple syrup, coconut oil, vanilla extract and eggs. Whisk to combine.
  • Fold the dry mixture into the wet mixture until a dough forms.
  • Add dough to a parchment lined or sprayed loaf pan and bake for 45-50 minutes.
  • Meanwhile, add the icing ingredients to a medium bowl and whisk to combine.
  • Allow the cake to cool on a cooling rack and then add icing on top. Add lemon slices to the top of your cake and enjoy!
