Veggie Mediterranean Bowl


Happy Thursday! It’s recipe day, and I have an amazing Mediterranean Bowl With Veggie Kabobs to share with you! We seriously can not get enough of this bowl, I’ve been eating it for lunch every day lately! It’s such a delicious combination of creamy, salty, crunchy and fresh. mediterranean Kabobs

Mediterranean Bowl With Veggie Kabobs

  • 1/2 red bell pepper
  • 1 zucchini
  • 1/2 red onion
  • 8 Hilary's Veggie Bites
  • 2 cups micro-greens
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 whole-wheat pita bread
  • 4 tablespoons hummus
  • 10 olives

Ingredients To Make Vegan Tzatziki Sauce

  • 1/4 cup cashew cream sauce *see recipe link below
  • 1 tablespoon cucumbers diced
  • 1 tablespoon fresh mint diced


  • Preheat the oven to 425 degrees Fahrenheit
  • Slice bell pepper, zucchini and onion into equal size pieces
  • Place veggies and Hilary's Veggie Bites on a kabob skewer
  • Let kabobs roast in the oven for 20 minutes (rotate 2 times)
  • Meanwhile, add micro greens to a bowl
  • Pour lemon juice and olive oil over greens
  • To make Tzatziki sauce mix together cashew cream, cucumber and mint
  • Add hummus, olives and vegan Tzatziki sauce into bowl
  • Toast pita bread and add to bowl
  • Lastly, add kabob to the bowl and enjoy!
